Non sempre preparare un’insalatona vuol dire mangiare per forza un pasto <strong>leggero</strong>!<br />
Pensate a quelle che vengono proposte nei bar o tavole calde per le pause pranzo: poca verdura e magari un insieme di alimenti ricchi di grassi di <strong>cattiva qualità</strong> come tonno sott’olio, mozzarelline senza gusto, misto di sottaceti o sottoli, formaggi grassi e magari come condimento olio d’oliva di dubbia provenienza… chiaramente questo mix di ingredienti, a conti fatti, diventa molto più pesante e calorico che un piatto di pasta semplice condito con pomodoro fresco!</p>
<p>Imparare ad <strong>equilibrare</strong> un piatto di insalata, per creare un pasto bilanciato è il tema di quello che diremo in queste righe, con alcuni spunti pratici, gustosi e sani! Sicuramente la base dovrà essere composta da <strong>verdure freschissime</strong>: insalata di qualunque tipo, verde e tenera o croccante tipo radicchio quando la stagione inizia a cambiare e si avvicina l’autunno. A questa possiamo unire quello che preferiamo: carote per addolcire, finocchio per dare croccantezza e aumentarne il potere drenante, zucchine grattugiate crude, cappuccio affettato sottilissimo… le combinazioni possono essere un sacco!</p>
<p>Alla verdura aggiungiamo ora gli <strong>alimenti proteici</strong>: qualche pezzetto di formaggio grana, del tonno di buona qualità (meglio ancora se i cubetti di tonno sono freschi) o del petto di pollo a bocconcini cotto senza grassi aggiunti. Benissimo delle uova sode o delle striscioline di prosciutto crudo o bresaola e chiaramente gli immancabili legumi: fagioli e ceci si prestano benissimo ad arricchire le nostre insalate!</p>
<p>Veniamo poi alla<strong> fonte di grassi</strong>: oltre al buon condimento, dato dall’olio extravergine di oliva, preferibilmente spremuto a freddo, possiamo unirvi della frutta secca o dei semi oleosi, oppure le olive che devono essere intere (non acquistate quelle già tagliate a rondelle…).</p>
<p>L’importante è non unire troppi ingredienti: al massimo due alimenti proteici e una tipologia di grasso, oltre al condimento. Vediamo<strong> qualche spunto</strong> da provare e modificare a vostro piacimento!</p>

alla base di insalata tenera (tipo novella) unite dei pomodorini secchi (non conservati sott’olio se possibile!) che daranno molto sapore al piatto e unite dell’avocado a cubetti piccoli: mancando la componente proteica questa insalata può essere usata come contorno ad un piatto di carne o pesce bianchi.</p>
<p><strong>INSALATA AUTUNNALE</strong><br />
può fungere da piatto unico ed è composta da radicchio rosso tagliato a julienne molto sottile a cui possiamo unire cubetti di parmigiano reggiano, noci spezzettate grossolanamente e fichi secchi tagliati a piccoli cubetti: ottimo il connubio dolce-sapido di fichi e formaggio!</p>
<p><strong>INSALATA DI PESCE</strong><br />
per la base usiamo sempre un’insalata tenera o del cappuccio verde tagliato sottilissimo; uniamo delle arance tagliate a vivo e del salmone affumicato (se non vi piace il gusto affumicato, bene anche del salmone fresco a piccole striscioline)…colorata e buonissima!</p>
<p><strong>INSALATA CREMOSA</strong><br />
tagliate a striscioline sottilissime il radicchio rosso e unitevi dei cubetti di prosciutto cotto freschissimo e delle noci spezzettate. Condite questi ingredienti con dello yogurt greco senza grassi o con una salsa allo yogurt composta da yogurt bianco ed erba cipollina sminuzzata.</p>
<p><strong>INSALATA CLASSICA</strong><br />
più semplice unire del petto di pollo grigliato e tagliato a pezzetti con delle scaglie di grana o qualche briciola di feta greca alla base di verdura preferita.</p>
<p>Sbizzarritevi allora e scegliete <strong>ingredienti di prima qualità</strong>, l’estate permette molte sane alternative!</p>

<p>Ridiamo vita e piena funzionalità al nostro corpo e liberiamolo dalle <strong>tossine</strong> accumulate durante l’inverno. Questo è il periodo in cui la rete ci assale con pseudo-alchimisti che propongono pozioni magiche utili, a loro dire, a ripulire l’organismo… ma, per non cadere in tranelli poco corretti, perché non affidarci più semplicemente alla nostra <strong>fidata amica natura</strong>?</p>
<p>La <strong>verdura verde</strong> presente in questi periodi dell’anno è utilissima per <strong>detossinare</strong> naturalmente il nostro organismo, partendo dal <strong>fegato</strong>, ghiandola deputata all’eliminazione delle tossine. Il fegato, attraverso la secrezione della bile, favorisce la digestione di alcune sostanze alimentari e facilita la digestione di pasti abbondanti e di difficile assimilazione, eliminando appunto le sostanze tossiche e non funzionali per il nostro benessere.</p>
<p>Proprio per questo è utile stimolare la sua attività: vi sono alcune specie vegetali particolari che attivano tali funzionalità: tarassaco, rucola, carciofo, radicchio verde, ma anche valeriana ed erba cipollina.</p>

<p>Ricco di <strong>calcio</strong> e <strong>ferro</strong> è utile per rinforzare l’organismo durante questa stagione, anche per chi pratica attività <strong>sportiva</strong> in quanto durante la primavera si avverte prima il senso di stanchezza e debolezza fisica. Cotto ha un buon effetto <strong>diuretico</strong> e un recente studio condotto in Cina associa l’acido cicorico, contenuto in molte erbe selvatiche tra cui il tarassaco, al mantenimento di una buona memoria.</p>
<h6>RUCOLA</h6>
<p>È un’erba selvatica stimolante dell’appetito e della digestione e utile perché, grazie al suo contenuto in sulforano, <strong>protegge le mucose dello stomaco</strong>. È ricca di vitamina A, C e di zolfo.</p>
<h6>CARCIOFO</h6>
<p>Ottimo in cucina il suo “cuore”, ma anche la parte più interna e tenera del suo gambo.<br />
Se mangiato <strong>crudo</strong> in pinzimonio svolge al massimo la sua azione digestiva e di stimolo delle funzioni del fegato.<br />
La cynarina, il suo principio attivo, aiuta a mantenere regolari i valori di <strong>colesterolo</strong> nel sangue e l’inulina, fibra di cui è ricco, favorisce lo sviluppo di una buona flora intestinale.</p>
<h6>VALERIANA</h6>
<p>Utile per migliorare la <strong>luminosità della pelle</strong> grazie alle vitamine A e C, soprattutto se arricchita da <strong>semi oleosi</strong> (girasole, sesamo, mandorle) o condita con olio extravergine d’oliva così da aggiungere la vitamina E, antiossidante e amica del trofismo cutaneo.</p>
<h6>ERBA CIPOLLINA</h6>
<p>Fa parte, insieme a dragoncello, prezzemolo e cerfoglio, delle “<strong>Herbes Fines</strong>” usate in gastronomia ed è apprezzata per il suo sapore a metà tra aglio e cipolla; utilizzata per profumare sughi e frittate, ha proprietà <strong>diuretiche</strong> e <strong>tonificanti</strong>.</p>
<h6>RADICCHIO VERDE</h6>
<p>Appartiene alla grande famiglia delle <strong>cicorie</strong> ed è uno degli ortaggi più ricchi di ferro, magnesio e calcio, oltre che di acido folico e vitamina K.<br />
Come tutte le verdure amare svolge un’azione di stimolo sulle funzioni del fegato che si traduce anche in una maggiore luminosità della pelle.</p>
<p>Usiamo allora il colore verde nei nostri piatti primaverili…ne trarranno beneficio la digestione, la funzionalità del fegato, la depurazione del nostro organismo e la bellezza e la luminosità della pelle, in vista dell’abbronzatura estiva!</p>
