Ma… <strong>farà male</strong>? Il caffè è fonte di caffeina, sostanza <strong>stimolante</strong> responsabile di tutte le proprietà toniche, stimolanti, ergogeniche e digestive attribuite al caffè stesso.</p>
<p>Il quantitativo di <strong>caffeina</strong> di una dose di caffè però varia dalla quantità di bevanda, dal tempo di infusione, dalla varietà del caffè e dalla temperatura dell’acqua utilizzata per prepararlo.</p>
<p>In media, il caffè preparato con la moka (circa 50 ml) contiene 80 mg di caffeina, un espresso (circa 30 ml) contiene 60 mg di caffeina, un caffè filtrato all’americana 85 mg per 125 ml di bevanda e un decaffeinato meno di 5 mg per tazzina.</p>
<p>Un livello di assunzione di caffeina <strong>fino a 300 mg</strong>, consumata nel corso della giornata (quattro tazzine circa di espresso) non pone problemi di sicurezza per gli adulti sani della popolazione in genere, fatta eccezione per le donne in gravidanza.</p>
<p>I dati sono poi da valutare a seconda di età, sesso e peso del soggetto. È utile ed interessante vedere come, in seguito a numerosi studi scientifici, <em>l’European Food Safety Authority</em> (<strong><em>EFSA</em></strong>, autorità europea per la gestione della sicurezza alimentare) ha dimostrato che la caffeina determina un <strong>miglioramento delle performance fisiche</strong>.</p>
<p>Una dose moderata di caffeina, equivalente a circa 3 mg/kg del peso corporeo, può migliorare le attività di resistenza come la corsa, il ciclismo e il canottaggio, oltre che le attività di resistenza in palestra e gli sport a intervalli come il calcio e il rugby. I dati dicono che assumere caffeina anche entro un’ora prima dell’attività fisica intensa, non provoca alcun effetto collaterale, anzi migliora la prestazione in resistenza.</p>

Una recente metanalisi riconferma la sicurezza del caffè per il sistema cardiovascolare: quante volte si è sentito dire che il caffè deve essere evitato per chi ha problematiche cardiovascolari? In realtà i dati dimostrano il contrario!Si confermano infatti gli effetti benefici di un consumo moderato di caffè sull’apparato cardiovascolare sia negli individui sani sia nei soggetti con problematiche cardiovascolari.</p>

<h6>IL PARERE DELLA DIETISTA</h6>
<p>Io raccomando sempre di non esagerare (<strong>tre tazzine al giorno</strong>) e di ascoltare la propria personale <strong>tolleranza</strong> in quanto il caffè, in particolare l’acido clorogenico in esso contenuto, stimola la secrezione dello stomaco: questo favorisce la digestione, ma in soggetti particolarmente sensibili può creare <strong>irritazione</strong> alla mucosa con episodi di gastrite poco piacevoli.</p>
<p><strong>Attenzione donne! </strong>Chi soffre di forte ritenzione di liquidi, magari con vera stasi del sistema linfatico e infiammazione dei tessuti con presenza di <strong>cellulite</strong>, deve ridurre l’assunzione di caffè in quanto questo sembra peggiorare la gestione dei liquidi corporei accentuando il problema e aumentando l’infiammazione.</p>
<p>Vi ricordo inoltre che la caffeina non è contenuta solo nel caffè! La troviamo infatti nel <strong>thè</strong>, nella <strong>cioccolata</strong>, nelle bevande tipo <strong>cola</strong> e nelle bevande <strong>energetiche</strong>… dobbiamo tenerne conto per arrivare a dire quanta caffeina assumiamo.</p>
<p>Bene allora il caffè nella persona adulta sana, nello sportivo e in prevenzione di patologie cardiovascolari, magari a stomaco pieno, durante un’equilibrata colazione, dopo pranzo o prima dell’attività fisica: tutto con moderazione e buon senso, una pausa che possa essere un piacere e che non diventi un problema!</p>
